2020 has seen a lot of renewed interest in the pleasures of home cooking, so if you’re tempted to stage your own version of the Great British Bake-Off this Chanukah we have you covered! JNF UK’s resident master baker Ruth has provided us with her recipe for doughnuts, plus a gluten-free option so the whole family can enjoy them!
Ingredients
140g Granulated sugar
1 tbsp Dried quick action yeast
1200g Strong bread flour
3 medium Eggs
50ml Oil
2 tsp Salt
200g Grape juice or other sweet juice
200g Water
Extra Oil (for frying)
Topping or filling (optional)
Jam, chocolate spread or peanut butter filling. Coat in cinnamon sugar, chocolate powder or your favourite icing.
Method
Step 1
Put all the dry ingredients into a mixer or large bowl. Make a well and add the eggs, oil, your choice of juice and water. Mix all the ingredients together.
Step 2
Knead well into a soft dough.
Step 3
Put dough into an oiled covered bowl and leave in a warm drought free place to rise until 3 times the original size. Punch down and leave to rise again. (The rising process can take up to 3 hours).
Step 4
Roll out to 1.5 cm thick on a well-oiled surface. Cut out circles and cut out or push out hole in the centre if required. (Raw doughnut can be frozen at this stage, to be cooked at a later date). Leave to rise on baking tray with oiled baking paper while you wait for the oil to heat up.
Step 5
Heat oil in a deep pan on medium heat. Test temperature with a small piece of dough, it should go golden brown.
Keep doughnuts widely spaced in the oil, until they are golden brown and then turn carefully in the oil to brown the other side. Drain on kitchen paper towel.
Step 6 (Optional)
Decorate, fill or coat as desired.
Gluten free alternative
Ingredients
4 cups Gluten free flour blend plus 1/2 tsp Xanthan Gum
1/4 cup Granulated sugar
2 1/4 tsp Dried instant yeast
2 medium Eggs
1 1/4 cup Warm water
Pinch of salt
1/4 cup Margarine (at room temperature)
Extra Oil (for frying)
Topping or filling (optional)
Jam, chocolate spread or peanut butter filling. Coat in cinnamon sugar, chocolate powder or your favourite icing.
Method
Step 1
Combine dry ingredients (except for salt) with water and egg. Mix with a wooden spoon. Then add salt to the mixture.
Step 2
Knead using as little extra flour as possible. Sticky dough makes fluffy doughnuts!
Step 3
Cover the dough and let rise for 2 hours in a warm place.
Step 4
Roll onto a floured surface, 1.5 cm thick let (at this stage you can sprinkle surface with more flour if the dough is too sticky). Let rise for 20 minutes.
Step 5
Cut out circles using a well-oiled cutter. Cut out the central hole using a small circular cutter.
Step 6
